To be honest, I love airplane food. I don't like the sandwiches that you get on budget airlines like Indigo; I am talking about the food that you get on full-service airlines. Recently, I travelled with Air India and we were served Vegetable Noodles with Chicken Manchurian and a Carrot Cake with cream cheese. I absolutely loved it!
But that's not the case with many people. They find the food to be bland and that's neither their fault nor the airline’s. It's the fault of their taste buds. You see, when you are travelling at high altitudes, our senses don't work effectively. The sense of taste is one of those that fades to a great extent with altitude. So our taste buds aren't as functional as they are on the ground. Hence, the food lacks flavour or taste.
To compensate for the inactive tastebuds, the caterers that prepare food for the airlines take special care about the flavour while preparing it and at the same time, they have to be careful not to add too much of artificial colours of flavouring because a group of passengers complaining of stomach problems will force an emergency landing. So a balance has to be maintained and to some extent, the taste gets compromised there as well. But for me, I look forward to the in-flight meal service as soon as the seatbelt sign is switched off!
