I sometimes do ‘oven fries’ (French-cut potatoes tossed with minimal oil and seasonings). If I want to pad the portion size and add fewer calories, I’ll French-cut a carrot and toss it in with the potatoes. Or potato—singular, as is often the case. It is not. Vegetable juices can be a nice drink to indulge in if you like it, but what your body needs is for you to eat vegetables. Carrots are a popular winter vegetable and you should eat them regularly, a few times a week. They are also a fairly versatile vegetable that you can consume raw of cooked (hint: it’s more nutritious when cooked). As for braising, if you shred the carrots and add some sugar and cardamom while braising, you get a nice sweet treat (hot or cold).


You can use them for salads.

Make them into soups.

Add them to roasted vegetable trays.

Glaze them.

Pickle them.

Braise them with milk.

Use them for delicious currys.

And even stick them in cakes.

And, yes, from time to time having a carrot juice or smoothie is OK. But don’t over do it, it’s a bit of a sugar overload.
