Best and purest Vegitarian food

I am a big Foodie. I do like and eat non-vegetarian food. But I am predominently vegetarian - 95% of the times. I prefer simple combinations. While those exotic, multi-option Rajasthani thalis with lots of katoris of options look divine, I get quite confused. So what do I prefer? I prefer a simple two or three item combo.

  • Baingan ka bharta (spiced smoked aubergine) and Maharashrian Bhakri (roti made from Jowar or Bajra) served with raw onion. On the side can be some dry chatni such as til (sesame seed) or lasoon (garlic), etc. (I can make excellent bharata that I cook in a 50–50 mix of mustard oil and vegetable oil. While smoking aubergine, I make slits and insert cloves of garlic into them).
  • An alternate to the above is Maharashtrian Pithala-Bhakri. Pithala is made from gram floor. This is best savoured with crushed green chilli (thecha).
  • Rajma-Chawal (Red kidney beans curry with steamed Basamati rice) is an eternal favourite and a side of some savoury sweet
  • Sambar-Rasam-Rice with some vegetable and papaddam
  • Alu-Poori, especially the one available in North India rail stations (potato curry with fried flat small round Indian bread).
  • Alu-Gobi (with optional mutter added), Daal Fry and Parathas
  • Last but not the least - Sarson da Saag aur Makki ki Roti
