Just because they knew him, and that he was just like their vision of Tony Stark. They knew he could vamp his way through. And he did. Good old RDJ improvised most of the dialogue in iron man:

Maybe not risky, more than it was a masterful, wildly improbable, casting choice by Guy Ritchie. He got this guy:

To play the part of a gypsy bare knuckle fighter, in a supporting role, in a London gangster caper. His first appearance in Snatch is him standing up from an unwiped shit that he’s taken next to a caravan.

His performance is flawless. His accent perfect. It’s a tour de force of acting. His best, most dynamic role by a country mile. Awesome.
