This is a great question. I am glad to see people are making an effort to fix their meals. There are many good, delicious, nutritious and easy to make recipes for everyone. I have been writing about vegetarian Indian food for more than a decade and am sharing some easy recipes which I have developed over time.
A few suggestions before you start-
- Choose a recipe
- Make a list of ingredients
- Shop all the ingredients in a small amount.
- See if you have the necessary kitchenware. For example, a non-stick pan would be convenient (I personally don’t like them but they are a convenient aid in bachelor life).
Time to start working with your recipes:
- Chickpeas Salad (Chola Chaat)- Chole, also known as Chickpeas or Garbanzo beans, are a very good source of protein. In this preparation, I have also added cucumber, tomato, red onions, and red bell peppers along with a lot of lime juice to enhance the flavor of this healthy salad.
2. Khichdi - This is a traditional protein-carb combo traditionally made with legumes and rice. Khichdi is a very light meal, is easy to digest and is very nutritious.
3. Cracked Wheat Porridge (Daliya)- Daliya or cracked wheat is a good source of fibers. This is a delicious preparation for cracked wheat porridge.
4. Savory Vermicelli (Namkeen Sewai) - Sewai, also called vermicelli in English, are usually made of semolina. You can find this variety of vermicelli in the Indian or Asian stores. Vermicelli cooked with colorful vegetables is a delicious, nutritious as well as healthy preparation.
5. Garden Fresh Sandwich - Sandwiches are one of the easiest and quickest meals to make. They are very popular for lunch box, picnics, tea parties, etc. One can use plain, whole grain, or flavored bread to make sandwiches as per taste. The selection of veggies can vary too.
6. Semolina Uttapam- Uttapam is a very popular South Indian dish; these are thick semolina pancakes made with fermented batter. Traditionally onions, bell pepper, and tomatoes are added in the batter.
7. Mango Bruschetta- Bruschetta is an Italian appetizer made with grilled bread topped with veggie combinations. This is a fusion recipe of bruschetta; the topping of this bruschetta has a sweet and tangy taste of mangoes.
8. Bombay Sandwich This sandwich, popular street food of city of Mumbai, is super easy to make. I have added two colored layers in this sandwich. You can add more layers if you want to.
9. Bread Poha- In the fast going life of a bachelor, bread becomes an integral part of the routine. The word Poha refers to flattened rice flakes, but this recipe is simulating rice flakes with bread!
10. Rice with Soya nuggets (Tehri) Tehri is a rice preparation made with seasonal vegetables. It is very popular in North India. This is a delicious rice preparation, easy to make, and is especially enjoyable in winter months when we have fresh carrots, peas etc.
11. Basil Lemon pasta- a healthy, delicious, colorful and easy to make pasta.
12. Curd Rice- curd or Yogurt rice is one of the easiest and most soothing Indian dishes.
Most Salads as well as Soups are easy to make.
