My favourite food idli. love idli A LOT. It is my preferred food for all the meals!!! Now, coming to the question, there are quite a variety of idlis present in India. Let’s go through some of them!
Regular Idli

The regular idli is made with idli rice, urad dal and fenugreek seeds.
Grainy Udipi Idli

The idli uses the 3:1 (rice:urad dal) mix but the batter is coarse lending a grainy texture to these idlis that are not overly fluffy.
Khusboo Idli or Chettinad Idli

This is an incredibly soft idli. The batter made for this idli is extra fine in terms of consistency. Thus the idli tends to stick to your fingers and plate! The batter proportion is 4:1 (rice: urad dal) mix.
Kancheepuram Idli / Paruppu Idli

The origin of this idli has been traced in the Vardarajaswamy temple where this idli was offered as a prasad. This is another coarse idli with the batter proportion as 2:1 (rice: urad dal) mix. This idli is blended with the mix, ginger, ghee, jeery, curry leaves, cashew,bengal gram and pepper corns. It’s a treat in itself without the need of accompaniment.
Kotte Kaddubu

Another idli from Udupi, this idli is cooked in cones made from Jack fruit leaves and is steamed. The leaves add a subtle earthy, grassy flavor to the idlis
Ramasseri Idli

These idlis are super flat and super soft. They resemble a small dosa actually. Where to eat this delicacy? A thirty minute detour from Palakkad to Ramasseri where four families continue a two hundred-year old tradition.
Thatte Idli

This idli is also super soft and is steamed in plates and is found in Mysuru.
Rava Idli

This idli doesn’t require fermentation and is made using Suji (rava) and curd. This is a different idli and conventional idli.

Now this is one of the best way to eat idli. The super soft idlis are coated with a flavor-rich, hot idli podi and then crisped up in a pan. Then served with generous serving of ghee. Once you have had this, there’s no going back!
