What if a class has 100 students ? The class teacher will remember some name , will have some favorites, will know the faces of some , will confuse the names of some and finally will have some students whose names though how hard she tries , unfortunately she will not remember.

And what if it has hundreds of culture , language , different identities ? Also the task becomes tougher when you are the research lab of foods . The innovation hub of tastes. There are bound to go some unfortunate cousins unnoticed.

Mandige

A sweet tradition of Belgaum.

One special dish made during ganesh Puja , this sweet dish is largely unknown( though I am kind of debating in my mind whether I have seen it or not ? but surely the name is new to me ) outside Karnataka.

Kanchipuram Idli

As an indian it is 100% sure you must have heard about Idli .

But what about it’s punk spicy hot cousin ? Well here it is.

Spiced up with pepper, jeera, ginger, chillies and cashew nuts they are just or maybe a few notches higher than the more famous sibling on the taste meter.

Dhooska

A popular snack of Jharkhand. But they have still not left their home yet .

Deep fried with rice, chana dal(powdered) filled with minced green peas and chillies, are a treat for foodies.

Pork Akhuni

Trust the seven sister states to store some of the best gems of India.

Here is one navaratna from them.

Every meat lover would love to get their hands on this hot dish.

Caution : Before you jump here is caution ( though foodies tends to throw cautions out of the window ). One most important ingredient is the Bhut Jolokia the hottest chilly in India.

Bebinca

There are many dish which are highly cherished in regions due to evil turn of fate they cannot expand their business outside their domain.

One of them is Bebnica .

Traditional Indo-Portuguese pudding. This treat from Goa has seven layers of awesomeness.

I can personally assure that , Once you taste this you will never ever forget the taste.

Ngaa Atoiba Thongba

Well if you ever want a dish whose name shows it soul , look no further.

This Manipuri dish has real meta name. The name itself describes the way the fish is cooked. Ngaa means fish and atoiba means disintegrated in manipuri language. So, the fish is disintegrated in this way of cooking it.

A dish calls to be licked out of fingers.

Kakara pitha

Well in my language Kakra means crab and Pitha is a sweet so I was instantly attracted to this.

But no so wild as my imagination , Kakara pitha is a sweet deep-fried cake from Odisha.

These little sweet treats are made from cardamom-flavored semolina and wheat flour, which are then deep fried. These are also offered to temple deities and served hot or cold on many festivals.

Chaman Kaliya

Be honest ! if it was not in this list and you hear this name what will you assume ? A local B-grade Gunda of your city.

Chaman Kaliya is a mass favorite Paneer cuisine from the crown of India ( Jammu and Kashmir) .

This heavenly dish from the paradise is a must for a human to try once in their life.

Locho

By the name it looks the cute little kid of the class.

Locho is steamed Gujarati Farsan (Snack /Side Dish) originated in Surat.

This irregular shaped treats are highly popular dish in Surat. Traditionally used Butter , but with Garlic and cheese variations this is real attack on taste buds.

A food list about India can go on and on and on. But a long list can often be a test of patience. So to keep it simple and sweet I am going to round off with my one of the comfort foods.

Dhone Patar Bora

Trust Bengal to fry everything edible on this earth in heavenly aroma of Mustard Oil.

As I am writing I can even smell it. This common from Bengali kitchen but sadly I have not found this anywhere else.

This has to be one of the items on my last meal.

It’s Dinner time and I being a cruel human leave you to feast your eyes on the gems from indian kitchens.
